I am not ready for summer to be over yet. Everyone keeps talking about how fall is just around the corner but I am from Washington where summer doesn't start until July 5th and doesn't end (if we are lucky!) until the end of September - that's a whole month away! It's still 80 degrees outside lets enjoy summer until its over and then we can have some fall fun! Call it denial but I am gonna hang on to every last drop of summer that I can! So I made cupcakes, actually I made peach pie cupcakes, to celebrate summer. Enjoy!
Spiced Peach Pie Cupcakes
Directions
Cupcakes:
- 1 box of spice cake mix
- 1/3 cup of Greek yogurt
- 1/3 cup vegetable oil
- 2/3 cup of water
- 3 eggs
- 1 can of Lucky Leaf Peach Pie filling, drained, rinsed, and chopped into bite sized pieces
Crumble Topping:
- ½ cup flour
- ½ cup rolled oats
- ½ cup brown sugar
- ½ teaspoon cinnamon
- ¼ cup butter, melted
Pre-heat your oven to 350 degrees. Line cupcake tin with liners or grease well and set aside
For the topping: Mix together the flour, rolled oats, browns sugar, cinnamon, and butter and mix until crumbly. Set aside.
For the cupcakes: In a mixing bowl, mix the cake mix, Greek yogurt, oil, water, and eggs until smooth. Mix for 3-5 minutes more.
Fill your cupcake tins 1/3 full with cake batter, add a scoop of chopped peach pie filing, and cover with more batter. Sprinkle the top of the cupcakes with the Crumble Topping (more is better in this case!).
Bake the cupcakes for 17-20 minutes or until when you poke them with a tooth pick, the toothpick is clean.
Let the cupcakes cool for a little bit before serving. They are best served warm and for an extra special treat serve them with a scoop of vanilla ice cream!
So which camp are you in: A) I wear flip flops and sunglasses until it starts pouring down rain or B) I bust out the pumpkin lattes and sweaters as soon as it gets below 78 degrees??
